An icebox cake is made by layering crisp cookies or crackers with whipped cream and refrigerating the assembled dessert for several hours—preferably overnight. As it rests, moisture from the cream slowly softens the cookies, transforming them into tender, cake-like layers.
What began as a stack of store-bought ingredients emerges from the refrigerator cool, creamy and scrumptious.
Icebox cakes feel light and refreshing. They are also ideal for entertaining. Most require little more than easy assembly and can be prepared well in advance.

The Betty Ford Connection
First Lady Betty Ford had a recipe called “Chocolate Icebox Dessert.” It layered sliced angel-food cake with a chocolate mixture of whipped cream, eggs and melted chocolate, then chilled everything overnight.
In practical terms, it was an icebox cake, although the recipe called it a “dessert.”
The Gerald R. Ford Presidential Library confirms that White House correspondence files contained Mrs. Ford’s dessert recipes, and the icebox-dessert recipe has been reproduced from presidential-archive material.
