Made in France, the collection combines a substantial two-millimeter copper exterior with a nonreactive 18/10 stainless-steel interior. Copper heats quickly, spreads heat evenly and responds almost immediately when the burner is adjusted—qualities that give cooks unusually precise control over sauces, delicate proteins, caramel and anything else prone to overcooking.
The stainless lining provides a more practical cooking surface without requiring the specialized care associated with traditional tin-lined copper. Traditional brass handles give each piece the handsome, slightly aristocratic character associated with French restaurant kitchens, while flared pouring rims add an appropriately practical detail.
This is not low-maintenance cookware. Copper develops a patina and requires occasional polishing if you want to preserve its mirror-like finish. The pieces should be washed by hand, and induction cooktops require Mauviel’s separately sold interface disc. Brass handles can also become hot during cooking.
